    When you’re selecting a cake for a special event, which one do you normally choose? A traditional carrot cake? A flourless chocolate cake? Or, might you be an ice cream cake fan? If it's the latter, then this Strawberry Crumble Ice Cream Cake is the perfect choice! 

    The Strawberry Crumble Ice Cream Cake is the perfect dessert to make for birthday parties, family gatherings, and other special occasions. You can expect both children and adults to devour this incredible cake!

    HOW TO MAKE STRAWBERRY CRUMBLE ICE CREAM CAKE

    To make this delicious frozen cake, you'll need:

    • Strawberry ice cream sandwiches
    • Cool Whip
    • Strawberry jam
    • Strawberry Jell-O
    • Flour
    • Butter
    • Sugar
    • Vanilla

    Once you have your ingredients together, let's get to making this ice cream cake!

    MAKING THE ICE CREAM CAKE

    1. In a medium mixing bowl, combine half the container of Cool Whip and strawberry jam.
    2. Mix until well-combined.
    3. Layer 12 ice cream sandwiches in the bottom of a 9x13-inch dish. You may have to cut the last ice cream sandwich in order to get it to fit in the bottom of the dish.
    4. Spread the strawberry mixture over top of the ice cream sandwiches.
    5. Place a second layer of ice cream sandwiches on top of the strawberry mixture.
    6. Spread remaining Cool Whip over top.

    Place the pan in the freezer while you work on the topping.

    MAKING THE CRUMBLE TOPPING

    1. Create your crumble topping by combining the jello, ½ cup of flour, and ¼ cup of butter.
    2. Mix it up with a fork. 
    3. Grab a separate bowl and combine ½ cup flour, ½ cup sugar, a teaspoon of vanilla, and ¼ cup butter. Use your fork to create crumbles with it. 
    4. Sprinkle the strawberry crumbles on a baking sheet and then add the vanilla crumbles on top, using your hands to combine them. 

    Bake the crumbles for 7 minutes in a 350º Fahrenheit oven. Then allow them to cool before adding them to the top of the cake.

    WHERE DO YOU FIND STRAWBERRY ICE CREAM SANDWICHES?

    You can find strawberry-flavored ice cream sandwiches in Walmart or your local grocer's freezer section.

    If you can't find the strawberry-flavored sandwiches, you could use the traditional sandwiches, but it just wouldn't have as strong of strawberry flavor.

    WHAT IS THE CRUMBLE TOPPING MADE OF?

    The vanilla crumble topping consists of flour, sugar, butter, and vanilla. The strawberry version contains flour, sugar, butter, and strawberry gelatin. It’s like the topping of your favorite strawberry ice cream bar from the ice cream truck.

    CAN THIS CAKE HAVE DIFFERENT FLAVOR VARIATIONS?

    You can make this cake with any flavor of ice cream sandwich. If you decide on anything other than strawberry, you'll probably want to omit the strawberry jam from the recipe as well.

    When it comes to the crumble topping, if you're using traditional ice cream sandwiches, you can use different types of gelatin, including strawberry, lime or blue raspberry.

    HOW DO YOU STORE LEFTOVERS?

    Place any leftovers in the freezer to keep the ice cream from melting. You can cover the cake with aluminum foil or plastic wrap before placing it in the freezer.

    Allow to thaw slightly before cutting and serving it again.

    Ingredients

    For the Ice Cream Cake

    • 24 strawberry ice cream sandwiches
    • 16 ounces Cool Whip (divided)
    • ½ cup strawberry jam

    For the Strawberry Crumble Topping

    • 3 ounce box strawberry jello
    • 1 cup flour (divided)
    • ½ cup butter (divided)
    • ½ cup sugar
    • 1 teaspoon vanilla

    Instructions

    For the Ice Cream Cake

    • Layer 12 ice cream sandwiches in the bottom of a 9 x 13-inch dish. You may have to cut the last ice cream sandwich in order to get it to fit in the bottom of the dish.
    • Allow to soften for a few minutes and then use a spoon to gently press the ice cream sandwiches down a little bit.
    • In a medium mixing bowl, combine half the container of Cool Whip and strawberry jam. Spread this mixture over top of the first layer of ice cream sandwiches.
    • Place another layer of ice cream sandwiches on top.
    • Spread remaining Cool Whip over top.
    • Place ice cream cake in freezer while preparing the topping.

    For the Strawberry Crumble Topping

    • Preheat oven to 350º Fahrenheit.
    • Prepare a baking sheet by lining it with parchment paper.
    • In a medium-sized bowl, mix jello, ½ cup flour, and ¼ cup butter with a fork until it creates small crumbles.
    • In another medium-sized bowl, stir ½ cup flour, ½ cup sugar, ¼ cup butter, and 1 teaspoon vanilla. Use a fork until it creates small crumbles.
    • On your prepared baking sheet, sprinkle the strawberry crumbles.
    • Next, sprinkle the vanilla crumbles.
    • Using your hand, gently mix the two together.
    • Bake for 7 minutes.
    • When done, do not stir. Allow to cool completely.
    • When ready to serve ice cream cake, sprinkle strawberry crumble topping on top.

    Notes

    • You can find strawberry ice cream sandwiches at Walmart or your local grocery store. 
    • Switch up the flavor of the ice cream sandwich and strawberry jam for a different cake variation. 
    • Store your leftovers in the freezer and let thaw before serving.
