I've been craving salads lately. My favorite salad to make at home is really simple. It's just chopped romaine lettuce with chicken breast and bacon pieces drizzled with ranch dressing. Delicious and easy.
It's always good to have cooked chicken pieces on hand because they're so versatile. They're great for salads, tacos and even casseroles, like this one.
When I don't have rotisserie chicken from the deli on hand, I just air fry some chicken breasts, dice them up and keep them in the fridge for quick meal prep throughout the week.

Making Air Fryer Chicken Breasts
Let me just start by saying that you can really flavor chicken breasts with whatever seasoning combination suits your tastes. I keep it pretty simple with just a combination of salt, pepper and garlic powder.
McCormick makes this Himalayan All Purpose Seasoning that's really good if you really want to simplify your prep.
When you've seasoned the chicken breasts, just place them in the air fryer at 360º Fahrenheit for 30 minutes. I usually flip the chicken after about 20 minutes.
Use a meat thermometer to make sure they've reached 165º Fahrenheit. They should be a nice golden brown like this.
And tender and juicy on the inside.
Quite often, I just eat the chicken breast on it's own with a side of veggies.
It's an easy meal for me to throw together when my husband, Josh, is traveling and it's just me and the kids.
To add a little extra flavor, sometimes I brush a little melted butter over the top. So, good.

Air Fryer Chicken Breasts
Ingredients
- 2 chicken breasts (fat trimmed)
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon garlic powder
- Melted butter (optional)
- Parsley (optional)
Instructions
- Brush each chicken breast with olive oil.
- Next, season each with garlic powder, salt, and pepper.
- Preheat air fryer at 360 degrees for 3 minutes.
- Air fry at 360º Fahrenheit for 30 minutes, flipping after 20 minutes.
- Brush with some melted butter for a little extra flavor if you like and garnish with parsley.

- Mind the Size: Chicken breasts come in various sizes, so adjust the cooking time accordingly. Thicker breasts may require more time, while thinner ones may cook faster. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C) for safe consumption.
- Use Proper Seasoning: While the provided recipe calls for a simple seasoning of salt, pepper, and garlic powder, feel free to experiment with different herbs and spices to customize the flavor to your liking. Consider adding herbs like thyme or rosemary, or spices like paprika or cayenne for extra depth of flavor.
- Let it Rest: After cooking, allow the chicken breasts to rest for a few minutes before slicing or serving. This allows the juices to redistribute throughout the meat, resulting in juicier and more flavorful chicken. Additionally, if you've brushed the chicken with melted butter, the resting time allows the flavors to meld together for a tastier end result.
