I’ve been craving salads lately. My favorite salad to make at home is really simple. It’s just chopped romaine lettuce with chicken breast and bacon pieces drizzled with ranch dressing. Delicious and easy.
It’s always good to have cooked chicken pieces on hand because they’re so versatile. They’re great for salads, tacos and even casseroles, like this one.
When I don’t have rotisserie chicken from the deli on hand, I just air fry some chicken breasts, dice them up and keep them in the fridge for quick meal prep throughout the week.
If you’re new to air frying, chicken breasts are a great first recipe to try!
Making Air Fryer Chicken Breasts
Let me just start by saying that you can really flavor chicken breasts with whatever seasoning combination suits your tastes. I keep it pretty simple with just a combination of salt, pepper and garlic powder.
McCormick makes this Himalayan All Purpose Seasoning that’s really good if you really want to simplify your prep.
When you’ve seasoned the chicken breasts, just place them in the air fryer at 360º Fahrenheit for 30 minutes. I usually flip the chicken after about 20 minutes.
Use a meat thermometer to make sure they’ve reached 165º Fahrenheit. They should be a nice golden brown like this.
And tender and juicy on the inside.
Quite often, I just eat the chicken breast on it’s own with a side of veggies.
It’s an easy meal for me to throw together when my husband, Josh, is traveling and it’s just me and the kids.
To add a little extra flavor, sometimes I brush a little melted butter over the top. So, good.
