    This Fritos Corn Salad is a super easy summer side dish that takes just a few minutes to put together and tastes amazing! It’s creamy and crunchy and has all the great flavors that everyone loves. 

    What’s great about this corn salad with corn chips is that it’s a super versatile dish and can be served as a main or side dish at any potluck, picnic, or barbecue! Everyone is sure to love this delicious summer Frito salad, so get ready to make it all summer long!

    HOW TO MAKE FRITOS CORN SALAD

    Before you get started, make sure to grab the following ingredients:

    • Miracle Whip 
    • Sour cream 
    • Apple cider vinegar 
    • Minced parsley 
    • Sugar 
    • Paprika 
    • Salt 
    • Pepper 
    • Canned corn
    • Cherry tomatoes
    • Diced red onion 
    • Fritos corn chips

    MAKING CORN CHIP SALAD

    Once you’ve gathered all your ingredients, follow the steps below for a quick and easy summertime side dish.

    1. In a large mixing bowl, whisk Miracle Whip, sour cream, apple cider vinegar together, parsley, sugar, paprika, salt, and pepper together. 
    2. Add corn, tomatoes, and onions.
    3. Stir until combined. 
    4. Just before serving, stir in half of the crushed Fritos and sprinkle the remaining on top of the salad.

    TIPS FOR MAKING FRITO CORN SALAD

    • For a little more spice, add jalapeños or green or red bell peppers to the salad.
    • Try using other Fritos flavors such as chili cheese or barbecue for a different taste!
    • Make sure to not add the Fritos until you’re ready to serve. This prevents the chips from getting soggy and maintains that delicious crunch!

    CAN I MAKE CORN SALAD AHEAD OF TIME?

    This recipe is perfect for making 1-2 days ahead of time and storing in an airtight container in the refrigerator. Just add the Fritos right before serving!

    WHAT OTHER INGREDIENTS COULD I ADD TO THE SALAD?

    Some common add-ins for this Frito salad recipe include black beans, shredded chicken, parsley, cilantro, peppers, taco seasoning, and/or cheese.

    If you do want to add cheese, cheddar, Mexican cheese, Monterey jack, or pepper jack are all great options!

    WHAT KIND OF CORN WILL TASTE BEST IN THIS SALAD?

    Everyone will have different preferences for what corn they like to use. If you don’t want to use canned corn for this salad, feel free to use frozen or fresh corn straight off the cob.

    If you are using frozen corn, just be sure to let it thaw before using.

    HOW TO STORE LEFTOVER FRITOS CORN SALAD

    Don't try and freeze this salad. Between the Fritos and the mayo, it's just not a great idea.😉

    Storing leftovers of this salad can be a little tricky. I guess it comes down to whether or not you can put up with soggy Fritos.

    Bottom line, the leftovers won't be as good as the fresh salad. To try to add a bit more crunch back in, sprinkle some additional crushed Fritos on top before enjoying.

    Ingredients

    • ½ cup Miracle Whip
    • ⅓ cup sour cream
    • 2 tablespoons apple cider vinegar
    • 2 tablespoons minced parsley
    • 1 tablespoon sugar
    • 1 teaspoon paprika
    • 1 teaspoon salt
    • ½ teaspoon pepper
    • 2 - 15 oz cans of corn (drained)
    • 1 pint cherry or grape tomatoes (quartered)
    • ½ cup red onion (diced)
    • 9 ¼ oz bag Fritos (crushed)

    Instructions

    • In a large mixing bowl, whisk Miracle Whip, sour cream, apple cider vinegar together, parsley, sugar, paprika, salt, and pepper together.
    • Add corn, tomatoes, and onions.  Stir until combined.
    • Just before serving, stir in half of the crushed Fritos and sprinkle the remaining on top of the salad.

    Notes

    • For a bit of spice, add in jalapeño peppers or red peppers to the salad. 
    • Wait until you’re ready to serve to add in the Fritos or they will become soggy. 
    • Switch up the flavor of this salad by changing the Fritos that you use, like chili cheese or BBQ.
