Baby reds are steamed, mashed, loaded with delicious toppings and then drizzled with a cheesy broccoli sauce. Tastes just like a twice baked potato but prepared in record time!

Instructions

For the Potatoes

  1. Microwave potatoes as directed on package.
  2. Transfer to large bowl, add butter, heavy cream, sour cream, cheese, salt and pepper.
  3. Mash until ingredients are well combined.
  4. Divide mashed potatoes between bowls.
  5. Top with grated cheese, steamed broccoli, ham, bacon pieces and green onions.
  6. Drizzle with cheesy broccoli  sauce.

For the Cheesy Broccoli Sauce

  1. In a saucepan over medium heat, melt butter.
  2. Stir in flour, salt and pepper until smooth.
  3. Add milk gradually and bring to a boil.
  4. Stir constantly for 2 minutes or until thickened.
  5. Add the cheese and stir until melted.
  6. Add the cooked broccoli pieces.

Notes

Recipe makes two larger bowls or four smaller bowls.
