It’s the ideal side dish to prepare when you’re grilling meats and veggies and simple as buying a bag of coleslaw mix and combining it with ingredients that you probably already have in your fridge and pantry.
HOW TO MAKE COLESLAW
To make this simple coleslaw, you'll need:
- Mayonnaise
- Sugar
- Lemon juice
- Vinegar
- Salt & pepper
- Bag of coleslaw mix
PREPARING THE COLESLAW
In a medium mixing bowl, add mayonnaise, sugar, lemon juice, vinegar, pepper, and salt.
Use a whisk to mix your ingredients together for a minute or two.
You want to make sure to whisk long enough to dissolve the sugar with the vinegar and lemon juice. You don’t want to end up with a gritty dressing!
Once your mixture is smooth, pour your coleslaw mix into the bowl and mix everything together once again.
Make sure to toss it all together for a few minutes to make sure everything is well-coated.
Place the coleslaw in the fridge to chill for at least an hour before you serve it. You can also leave it in your large bowl and cover it with Press and Seal wrap.
CAN I USE FRESH CABBAGE?
You can use fresh cabbage. However, if you’re going to use fresh cabbage, be sure to use other fresh ingredients, such as carrots and radishes and slice them thinly.
Most coleslaw mixes will contain shredded pieces of these three ingredients. It’s easier to buy the bag of pre-made coleslaw mix, but you can certainly shred your own as well!
WHAT ARE THE INGREDIENTS FOR THE DRESSING?
The dressing consists of mayo with lemon juice, sugar, and vinegar.
It creates a slightly tangy, slightly sweet taste that goes great with the crunch of the fresh cabbage and carrots. The vinegar and lemon juice help to dissolve the sugar and make a super smooth dressing for your coleslaw.
HOW LONG DOES COLESLAW NEED TO CHILL?
The coleslaw should sit in the fridge for at least an hour to chill.
The longer you allow the coleslaw to chill in the fridge, the better it will be. The cabbage tends to soften a bit and becomes more flavorful.
HOW TO STORE LEFTOVER COLESLAW
Store leftovers in a plastic or glass food container with an airtight lid and put the leftovers in the fridge to keep them fresh.
It will stay fresh in the fridge for up to 3 days. Toss it once more before serving it after storing in the fridge.
