    Pizza is always a quick and easy dinner idea, but there’s only so much pizza you can eat in a month. This easy pizza casserole puts a whole new twist on your favorite dinner. With all the makings of a classic meat lover's pizza in a delicious, cheesy casserole, it’s the ultimate comfort food. 

    For a healthier option you can easily sneak in some veggies like zucchini, bell peppers or shredded carrots. Whole wheat or gluten free noodles can be substituted as well. 

    What I love about this recipe is that I can prep the casserole in the morning or the night before and throw it into the oven right before dinner time. If you want something quick and easy, but need a change from your normal pizza night, this pizza casserole is perfect for you!

    HOW TO MAKE EASY PIZZA CASSEROLE

    This recipe is super easy, and you only need six ingredients, making it the perfect weeknight meal. Here’s what you'll need:

    • Ground beef
    • Onion
    • Spaghetti sauce (choose your favorite)
    • Rotini noodles (cooked)
    • Pepperoni slices
    • Shredded mozzarella cheese

    Once you’ve gathered all your ingredients, pull out your 9x13 inch casserole dish and let’s get to work!

    1. Brown ground beef and onions over medium heat until meat is cooked thoroughly.
    2. In a large bowl, mix together spaghetti sauce and cooked ground beef.
    3. Add cooked rotini noodles and stir again.
    4. In a greased 9x13-inch baking dish, start with a layer half the noodle mixture
    5. Then layer half the pepperoni and half the cheese. Repeat.
    6. Top with remaining pepperoni slices and then bake for 30 minutes or until cheese is melted.

    CAN I MAKE PIZZA CASSEROLE AHEAD OF TIME?

    Assemble the pizza casserole in your baking dish, but don’t bake it. Instead, cover it and store it in the refrigerator overnight or several hours before you plan to cook it. Remove it from the refrigerator and bake as directed. 

    You can also freeze the pizza casserole in a freezer-safe dish for up to three months. Thaw the casserole overnight in the fridge, and then bake as directed.

    CAN I USE DIFFERENT PASTA?

    Yes! You can use different noodles for this easy pizza casserole recipe. I like to use a thicker pasta such as rotini so that you can easily spoon up the casserole when serving.

    Some other great options are macaroni noodles, penne, rigatoni and ziti.

    WHAT'S THE BEST WAY TO STORE LEFTOVERS?

    This easy pizza casserole is perfect for a crowd, and makes great leftovers for lunch the next day. You can store leftovers in an airtight container in the refrigerator for 5-7 days.

    Or, you can place any leftovers in a freezer-safe container and store it in the freezer for up to 2 months.

    Ingredients

    • 1 pound ground beef
    • Small onion (diced)
    • 24 ounce jar spaghetti sauce
    • 8 ounces rotini noodles (cooked)
    • 6 ounces pepperoni slices
    • 2 cups mozzarella cheese (shredded)

    Instructions

    • Preheat oven to 350º Fahrenheit.
    • Brown ground beef and onions over medium heat until meat is cooked thoroughly.
    • Cook rotini noodles according to package directions.
    • In a large bowl, mix together spaghetti sauce and cooked ground beef.
    • Add noodles and stir again.
    • In a greased 9x13-inch baking dish, layer half the noodles, half the pepperoni and half the cheese. Repeat.
    • Top with remaining pepperoni slices.
    • Bake for 30 minutes or until cheese is melted.

    Notes

    • If you don't have rotini, you can use other types of pasta such as macaroni, rigatoni, ziti, or penne.
    • Serve with a side salad for a complete meal. 
    • Store leftovers in the fridge for up to a week or the freezer for up to two months.
