Substitutions & Variations

  • Cookie dough variations: Feel free to use a homemade cookie dough, sugar cookie dough or another dough flavor  if you're looking for a different taste or want a bit less chocolate.

How to Make Halloween S'mores Ghost Cookies

Once you've gathered all your ingredients, preheat the oven to 350°F, line a large baking sheet with parchment paper and follow the steps below to make these cute ghost cookies!

Three squares of Hershey's milk chocolate resting on a graham cracker square on a parchment-lined baking sheet.
  1. Step 1: Arrange the 12 graham cracker squares on the prepared baking sheet and top each with a portion of the broken chocolate bars.

  1. Step 2: Place one large marshmallow on top of each piece of chocolate.

  1. Step 3: Divide cookie dough into 12 portions and flatten each into a round. Drape over each marshmallow, shaping into a dome and leaving the graham cracker exposed. Bake for 15-19 minutes, or until golden brown and baked through.

  1. Step 4: While the cookies bake, use a black edible marker to draw ghost faces on the remaining 12 marshmallows. Press one onto each warm cookie after baking and let cool for several minutes before serving.

Helpful Tips

  • Line with parchment paper: Melted marshmallow and chocolate can be sticky, so lining your baking sheet makes cleanup much easier.
  • Use a rolling pin: Flatten your cookie dough easily with the help of a rolling pin! Make sure to roll it into a large enough circle so that it fully drapes over the entire s'mores "tower," but isn't too thin that it tears apart.
  • Keep the marshmallows centered: Try to place the marshmallows in the center of each cookie to keep them from melting too far over the edge as they bake.
  • Watch the baking time: Keep an eye on the cookies towards the end of the baking time. You want the cookie dough to be golden and the marshmallows to be soft and gooey without being over-baked.
  • Add the ghosts while warm: Press the decorated marshmallows onto the cookies shortly after removing them from the oven so they stick without needing frosting.

Recipe FAQs

Why is my cookie dough difficult to flatten?

If you find that your cookie dough is too sticky or soft, you can refrigerate it briefly to make it easier to handle. You can also place the dough between two sheets of parchment paper before rolling it out to prevent sticking.

Why did my cookie dough spread so much?

Refrigerated cookie dough naturally spreads in the oven, especially as the marshmallow underneath melts. If your dough feels especially soft before baking, refrigerate the assembled cookies briefly to help the dough hold its shape a little longer.

How do I keep the marshmallow ghosts from falling off?

The trick is to press the ghosts onto the cookies while they're still warm. The melted marshmallow underneath acts like glue and helps the decorations stay in place as the cookies cool.

Can I make these cookies ahead of time?

Yes! You can assemble the cookies ahead of time and bake them just before you're ready to serve. They are best enjoyed right after baking so the chocolate stays melted and the marshmallows remain gooey.

Storage & Freezing Instructions

Storage Instructions

To store these spooky cookies, let them cool completely to allow the chocolate to set before putting them in an airtight container. Keep them at room temperature for up to 2 days for the best texture.

Freezing Instructions

Freezing these cookies isn't recommended, as these cookies are best enjoyed within a few days of baking.

  • 24 large marshmallows (divided)
  • Black edible marker (for decorating)

Instructions

  • Preheat oven to 350°F. Line a large baking sheet with parchment paper.

  • Separate the cookie dough into 12 portions. Flatten each piece of dough into a round large enough to cover the top of the s'mores stack.

  • Let the cookies cool for several minutes before serving.
