Desserts with simple ingredients tend to be my favorite. This flourless chocolate cake is one of those desserts. It's decadent and easy to make with simple ingredients that you can easily find at most grocery stores. It truly is a chocolaty treat everyone will love!

WHAT IS FLOURLESS CHOCOLATE CAKE?

A flourless cake is just that - a cake that doesn't use flour as part of it's base. It is a great option for people who are gluten intolerant or just choose to avoid flour.

It is a denser cake with a texture more like a cheesecake. The delicious chocolate glaze just puts it over the top!

HOW TO MAKE FLOURLESS CHOCOLATE CAKE

To make this flourless chocolate cake, you'll need:

  • Semi sweet chocolate chips
  • Butter
  • Sugar
  • Salt
  • Vanilla
  • Eggs
  • Cocoa powder
  • Fresh raspberries

Step 1: Place chocolate chips and 8 tablespoons of butter in a microwave-safe bowl.

Step 2: Microwave until butter is melted and chocolate chips are soft. Stir until the mixture is smooth, then pour it into a larger mixing bowl.

Step 3: Add sugar, salt, and vanilla and stir until combined.

Step 4: Add the eggs and mix until smooth.

Next, you're going to want to add the cocoa powder and stir again until uniform.

Pour the batter into an 8'' round pan that has been lined with parchment paper.

Then, bake and cool the cake.

MAKING THE CHOCOLATE GANACHE

For the glaze, place the chocolate chips and butter in a microwave-safe bowl and microwave until the butter is melted and the chocolate chips are soft.

Stir until the glaze is smooth and then spread it evenly over the cake.

Allow the glaze to cool and harden before serving.

HOW DO I STORE FLOURLESS CHOCOLATE CAKE?

If you want to save some of this flourless chocolate cake for later, simply put it in an airtight container and place it in the fridge. It will stay fresh in the fridge for up to 5 days.

CAN I FREEZE FLOURLESS CHOCOLATE CAKE?

Yes! To lock in the freshness for this delicious flourless chocolate cake, you will want to first wrap it in plastic wrap. Once it is tightly wrapped, place it in an airtight container.

The cake will keep for up to 3 months in the freezer. When you are ready to eat it, let it thaw on the counter until it reaches room temperature.

Ingredients

For the Cake

  • 1 cup semi sweet chocolate chips
  • 8 tablespoons butter (room temp)
  • ¾ cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • 3 eggs
  • ½ cup cocoa powder
  • Fresh raspberries for garnish (optional)

For the Glaze

  • ¾ cup semisweet chocolate chips
  • 3 tablespoons butter (room temperature)

Instructions

For the Cake

  • Preheat oven to 375º Fahrenheit.
  • Place chocolate chips and 8 tablespoons butter in a microwave-safe bowl.
  • Microwave until the butter is melted and the chocolate chips are soft.
  • Stir until mixture is smooth, then pour it into a larger mixing bowl.
  • Add sugar, salt, and vanilla. Stir until combined.
  • Add eggs. Mix until smooth.
  • Add cocoa powder. Once again, mix together until uniform.
  • Pour batter into an 8" round pan that has been lined with parchment paper.
  • Bake for 30 minutes or until the internal temperature reaches 200º Fahrenheit.
  • Allow cake to cool for 5 minutes before removing it from the pan.
  • Turn it over (upside down) on a serving platter.
  • Spread glaze evenly over cake.
  • Allow glaze to cool and harden before slicing cake.
  • Garnish with raspberries and enjoy.

  • Place chocolate chips and butter in a microwave-safe bowl.
  • Microwave until the butter is melted and the chocolate chips are soft.
  • Stir until glaze is smooth.

Notes

  • Allow your chocolate glaze to cool before serving. 
  • Store in an airtight container in the fridge for up to five days. 
  • To freeze, place your cake in a freezer safe container or bag for up to three months.
