    This super quick and easy Pickle de Gallo recipe comes together in minutes and is a healthy way to spice up the summertime snack table! Not only does it go great with tortilla chips, but it can also be used as a relish or topping for nachos, tacos, hotdogs, or burgers!

    HOW TO MAKE HOMEMADE PICKLE DE GALLO

    Before you get started, make sure you have the following ingredients:

    • Cucumber
    • Dill pickles
    • Sweet onion
    • Red bell pepper
    • Garlic clove
    • Salt 
    • Pickle brine 
    • Jalapeno (optional)
    • Tortilla chips (for serving)

    PREPARING THE PICKLE DE GALLO

    Once you’ve gathered all your ingredients, follow the steps below for a fresh and delicious summertime snack!

    1. In a large bowl, combine cucumbers, pickles, onions, peppers, garlic, jalapenos, and salt. 
    2. Pour pickle brine over top and mix again. 
    3. Cover and refrigerate for 1 hour.
    4. Grab some tortilla chips and enjoy!

    TIPS FOR MAKING HOMEMADE PICKLE DE GALLO

    • This recipe is super easy to make ahead of time, and the longer it sits, the more flavorful it gets!
    • Feel free to adjust the recipe and add more or less of any certain ingredients!
    • When dicing the vegetables, be sure to keep everything a consistent size and relatively small so that all of the flavors are evenly distributed.

    WHAT IS THE BEST KIND OF PICKLE TO USE?

    Dill pickles are the most popular type of pickle to use for this dish because the flavors of the dill and garlic pair nicely together. However, if you prefer sweet pickles, those will also work for this recipe!

    This recipe is super easy to customize. To kick up the flavor, you can try adding extra dill, lime juice, or habanero pepper. Some beans and corn may also be a great addition!

    Ingredients

    • 1 cucumber (cut in half length-wise and deseeded then finely diced)
    • 1 cup dill pickles (finely diced)
    • ½ cup sweet onion (finely diced)
    • ½ red bell pepper (finely diced)
    • 1 garlic clove (finely minced)
    • ½ teaspoon salt
    • ½ cup pickle brine
    • 1 jalapeño (deseeded and finely minced (optional))
    • Tortilla chips (for serving)

    Instructions

    • In a large bowl, combine cucumbers, pickles, onions, peppers, garlic, jalapenos, and salt.
    • Pour pickle brine over top and mix again.
    • Cover and refrigerate for 1 hour before serving with tortilla chips.

    Notes

    • I like to use dill pickles for this recipe because the flavors of the dill pair well with the garlic. You can also use sweet pickles. 
    • You can add in spicy peppers, like jalapeño or habanero, extra dill or a splash of lime. 
    • You can serve this recipe with burgers, hot dogs, fish and tortilla chips.
