    With St. Patrick's Day right around the corner, I thought it would be fun to share some rainbow treats the next couple weeks.

    If you're a fan of the St. Paddy's Day classics, try these recipes for Guinness cupcakes, mint oreo pudding shots or Instant Pot corned beef!

    Today, however, I'm "over the rainbow"😜excited to share this fruit dip with you! It's a gorgeous pink lemonade rainbow swirl dip that pairs perfectly with fruit or graham crackers. It's beautiful and delicious, too.

    Your entire family is going to love this dip, and it's a great way to get kids to eat a ton of fruit!😉

    Are you ready to get started?!

    HOW TO MAKE RAINBOW FRUIT DIP

    To make this rainbow fruit dip you'll need:

    • Heavy whipping cream
    • Sugar
    • Cream cheese
    • Powdered sugar
    • Vanilla
    • Pink lemonade (I used Simply Lemonade with Strawberry)
    • Food coloring

    Start by grabbing your mixer and beat the heavy whipping cream and sugar on medium-high speed until medium peaks form, about 3-4 minutes.

    In a separate bowl, whip the cream cheese, powdered sugar, and vanilla together until smooth.

    It should have a smooth and creamy consistency.

    Blend in the pink lemonade - and yes, use liquid pink lemonade (I used the Simply Lemonade brand) - not powder from a packet.

    Now combine the whipping cream mixture with the cream cheese mixture.

    Beat until the dip is uniform throughout.

    Then, go ahead and divide the dip into four smaller bowls.

    Add about five drops of food coloring to each of the bowls. I used yellow, green, blue and red.

    Stir until the colors are uniform and mixed in well.

    Transfer the four containers of dip to a larger serving bowl.

    Use a toothpick to swirl the colors together.

    Just move the toothpick around enough to create some pretty swirls. Don't "over" stir or you'll muddle the colors and lose the rainbow effect.

    Add some sprinkles (of course😉) and enjoy with your favorite assortment of fruit and/or cookies!

    How Far in Advance Can I Make Fruit Dip?

    You can make fruit dip up to a week in advance if you store it in the fridge in a tightly covered container.

    However, if you prepare it completely and set it in the fridge, it may firm up, causing it difficult to dip anything in it. I would wait to add in the color until the day you plan to serve it or it may not be as light and fluffy as you'd like.

    Normally, a quick stir would solve that problem, but with rainbow fruit dip, stirring it too much could muddle up the colors, making it considerably less attractive. But hey, it would STILL taste good.😉 It's up to you!

    Any leftover dip could be used as a topping for toast, graham crackers or even cupcakes!

    What Should I Serve With Fruit Dip?

    Oh gosh, the ideas are endless. I normally serve this fruit dip with an assortment of fruits like:

    • Strawberries
    • Pineapple
    • Orange slices
    • Peaches
    • Pears
    • Grapes
    • Melon (Watermelon, Honeydew, Cantaloupe)
    • Cherries
    • Apple slices (toss with pineapple juice to keep from browning or just buy the ones from Walmart with calcium ascorbate)

    You can also try:

    • Vanilla wafers
    • Graham cracker snacks
    • Animal crackers

    Are There Other Flavor Variations I Could Try?

    To switch up the recipe, a bit, you could try:

    • Adding fruit juice like orange juice instead of the pink lemonade.
    • Mixing a packet of Jello powder with a container of Cool Whip.
    • Boosting the strawberry flavor by adding strawberry cream cheese instead of plain.
    • Mixing together cream cheese and marshmallow fluff.

    Can I Freeze Fruit Dip?

    I would love to say yes, but you may get less than desirable results because of the cream cheese.

    For normal fruit dip, you could maybe get away with it, because when thawed, you could stir it well enough to fluff it up and get rid of the watery texture created by the cream cheese.

    But with the rainbow fruit dip, once prepared, if you stir it up too much, you risk muddling the colors.

    I'm not sure you'll have any leftover anyway!😉

    Ingredients

    • 1 cup heavy whipping cream

    • ¾ cup powdered sugar
    • 1 teaspoon vanilla
    • ¼ cup pink lemonade
    • Food coloring of your choice (I used red, green, blue and yellow)
    • Sprinkles

    • Add some sprinkles and enjoy with an assortment of fruit and/or cookies.

    Notes

    • Don’t overstep your fruit dip or the colors will muddle together and lose the rainbow effect. 
    • If you make this recipe in advance, I recommend adding in the color until you plan to serve it so that you’re able to stir it. 
    • You can use leftover dip as a topping for cupcakes, toast for a dip for graham crackers.
