Thyme Carrots & Cauliflower
Carrots and cauliflower tossed with garlic and thyme and roasted to perfection!
Ingredients
- 1 lb. carrots, peeled, halved lengthwise, and sliced into 1–2 inch pieces
- 1 head cauliflower, cut into florets
- 3 tablespoons olive oil
- 1 1/2 tablespoons thyme
- 1 tablespoon minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat oven to 425º Fahrenheit.
- Toss together carrots, cauliflower, oil, thyme, garlic, salt and pepper in a bowl.
- Spread vegetables on a foil or baking mat-lined baking pan.
- Roast for 40 minutes or until tender.
