    This delicious zucchini patties recipe is an excellent way to use up the rest of your summer zucchini. Not only are fried zucchini patties super convenient to make for those busy nights where you’re craving something that’s both flavorful and healthy, but they are also ready in less than an hour!

    With only a few simple ingredients, you’ll have a perfect appetizer or side dish that’s fresh and rich with flavor, so dig in and enjoy!

    EASIEST WAY TO MAKE ZUCCHINI PATTIES

    Before you get started, make sure you have the following ingredients:

    • Medium zucchinis 
    • Eggs 
    • Instant potato flakes 
    • Grated Parmesan cheese 
    • Shredded mozzarella cheese 
    • Chopped onion 
    • Salt to taste 
    • Vegetable oil

    PREPARING THE SHREDDED ZUCCHINI PATTIES

    Once you’ve gathered all your ingredients, follow the steps below for a quick and easy summertime side dish.

    1. Slice zucchini lengthwise and use a spoon to scoop the seeds out. 
    2. Grate zucchinis. 
    3. Place the grated zucchini in a medium bowl.
    4. Add in the eggs, potato flakes, Parmesan cheese, mozzarella cheese, onion, and salt. Stir until well-combined.

    FRYING THE ZUCCHINI PATTIES

    In a large skillet over medium-heat, start heating the oil and follow the steps below:

    1. Form 8 patties that are about ¾-inch thick. 
    2. Place patties in hot oil and cook 2-3 minutes on each side until they are golden brown. 
    3. Transfer the patties to a plate covered with paper toweling to drain the oil off.
    4. Get ready to enjoy!

    TIPS FOR MAKING ZUCCHINI PATTIES

    • Be sure to squeeze the grated zucchini with a clean kitchen towel to remove excess moisture. This ensures that the patties are crisp and not mushy!
    • Smaller or medium sized zucchini are less watery and have more flavor compared to large zucchinis.
    • The easiest way to shred the zucchini is with a food processor, but a handheld cheese grater will also do the job!

    These zucchini patties taste incredible with a dipping sauce such as mayo, sour cream, greek yogurt, ranch, or garlic cucumber dip. They also pair amazingly with grilled chicken, a fresh chopped salad, or grilled salmon.

    WHAT'S THE BEST WAY TO STORE THE PATTIES?

    Store leftovers in an airtight container in the refrigerator for 4-5 days. To reheat, set the oven to 375 degrees Fahrenheit and cook on a sheet pan for 10-15 minutes.

    HOW DO YOU FREEZE FRIED ZUCCHINI PATTIES?

    After cooking and letting the zucchini patties cool down, they can be stored in the freezer in a Ziploc bag for up to two months. Thaw before reheating.
