    Air Fryer Zucchini Fries

    Zucchini season here in Wisconsin usually goes from July until about October, so right now is the perfect time of year to dig out any zucchini recipes you may have! Today, I'm sharing a zucchini recipe for the air fryer - Zucchini Fries!

    Slice up some zucchini, dredge them in a seasoned Panko breadcrumb mixture and air fry until golden and crispy! So easy and good for you, too!

    HOW TO MAKE AIR FRYER ZUCCHINI FRIES:

    • Zucchini
    • Eggs
    • Panko bread crumbs
    • Grated Parmesan cheese
    • Salt & pepper
    • Paprika
    • Garlic powder
    • Italian seasoning

    Begin by cutting off the ends of the zucchini. Then slice them into thin sticks about 3-4 inches long and  ½ inch thick.

    SHOULD YOU PEEL ZUCCHINI BEFORE SLICING IT?

    Nope, not zucchini. Peeling it could actually make the end product a bit mushy due to the high water content of the squash. The skin actually provides a bit of extra texture to the fries!

    HOW SHOULD YOU CUT ZUCCHINI FOR MAKING FRIES?

    Choose small- to medium-sized zucchini and cut them into fries about 3-4 inches in length and about ½ inch wide. Do your best to cut them consistently for even air frying.


    Dip the sticks of zucchini into eggs and dredge in Panko mixture, pressing to coat. Place the sticks in the air fryer basket, ensuring there is no overlap.

    HOW DO YOU ENSURE THE ZUCCHINI FRIES ARE CRISPY?

    Well, the air fryer will do a lot of that work for you, but because zucchini has a lot of natural moisture, pat the zucchini dry with paper toweling prior to dipping them in the egg mixture.

    Also, the size of the zucchini sticks matter. The smaller they are the crispier they'll be.


    After spritzing the basket with some olive oil, air fry at 350º Fahrenheit for 8-10 minutes or until fries are golden brown.

    Remember that zucchini fries are best when served fresh out of the air fryer.

     If you're not quite ready to eat yet or you want to make multiple batches, pop them in the oven at around 200º Fahrenheit to keep them warm.

    WHAT SHOULD YOU DO IF THE PANKO ISN'T STICKING TO THE FRIES?

    If you're having some problems with the Panko adhering to the zucchini, you could try coating the fries with some flour and then dipping in the egg and the Panko.

    The flour can help soak up any additional moisture from the food.

    WHAT DIPPING SAUCE SHOULD I USE FOR ZUCCHINI FRIES?

    When serving the zucchini fries, there are plenty of yummy sauces you can dip them in. I love just using ranch, but feel free to get more creative! Here are some possible options:

    • Greek yogurt
    • Ranch
    • BBQ sauce
    • Pesto
    • Marinara sauce
    • Mayo or spicy mayo
    • Garlic aioli
    • Chipotle Ketchup
    • Spicy Mayo

    HOW DO YOU STORE LEFTOVER ZUCCHINI FRIES?

    If you have any zucchini left over (which we normally do not☺️) you can store the sticks in an airtight storage container in the refrigerator for up to 2 days.

    HOW DO YOU REHEAT ZUCCHINI FRIES?

    You can reheat the zucchini fries right in your air fryer! Set the air fryer to 400º Fahrenheit and heat for 3-4 minutes.

    CAN YOU FREEZE AIR FRIED ZUCCHINI FRIES?

    Yes, you can. Just wait for them to cool and then place in a ziplock freezer bag.

    Ingredients

    • 2 medium zucchini
    • 2 eggs (beaten)
    • ½ cup Panko bread crumbs
    • ¼ cup grated Parmesan cheese
    • ¼ teaspoon salt
    • ¼ teaspoon pepper
    • ¼ teaspoon paprika
    • ¼ teaspoon garlic powder
    • ¼ teaspoon Italian seasoning

    Instructions

    • Prepare your air fryer basket by spraying it with olive oil.
    • Cut ends off of zucchini and cut them in half. Slice them into thin sticks about 3-4 inches long and  ½ inch thick.
    • In a small bowl, combine bread crumbs, Parmesan cheese, salt, pepper, paprika, garlic powder and Italian seasoning.
    • Beat eggs in a separate small bowl.
    • Dip the wedges into the beaten egg and then coat them with the bread crumb mixture.
    • Place breaded wedges in greased air fryer basket.
    • Air fry at 350º Fahrenheit for 8-10 minutes or until fries are golden brown.
    • Enjoy immediately.

    Notes

    • To bake these zucchini fries in the oven instead of an air fryer, simply place on a parchment-lined baking sheet and bake for 25-30 minutes at 425º Fahrenheit or until the zucchini fries are golden and crispy.
    • Avoid peeling zucchini when slicing it to prevent it from becoming mushy when cooked.
    • When selecting your zucchinis, choose small to medium-sized ones.
    • If your panko isn't sticking to your zucchini, try coating your fries with flour before dipping them into the egg mixture.
